Earth Day Events - Valley and Nationwide!

I love Earth Day! It's a time of year companies talk about steps they are taking to be more sustainable, neighbors get together to take part in a clean up, and (of course) celebrate my birthday.

I have compiled a list of Arizona activities as well as a few National events going on.

Local:

Nationwide:
  • Sat. April 20th - Earthlings Unite! An "Out-of-this-world" bash at select Whole Foods
  • Sat. April 20th - Free T-shirt upcycling event at Michael's
  • Sun. April 21st - Target is giving away 1.5 million reusable bags 
  • April 20th - April 22nd - Stop by a Pottery Barn kids for a free package of sunflower seeds
  • Mon. April 22nd - Bring in a reusable coffee tumbler and get free coffee at Caribou Coffee
  • Mon. April 22nd - Bring in 5 plastic bags to recycle and get a free reusable bag from Disney!

Kale News - Week 3

I received my membership package from the VINE's Kale Club (picture to the right).

My friend Mark Sutton of Heart Healthy Pizza posted a 4 part video series on How to Cook Kale.

The Quad-City times recognized Kale in all it's glory and posted a yummy-looking vegan recipe.

I created a Kale-themed treasury on Etsy to promote both vegan-friendly kale items and small business owners.

I fell extra in-love with this amazing vintage kale pot on Etsy. Kale AND gardening? It was clearly made for me.

The Kale-a-rama Vegan festival is only 6 more days away!

Review & Giveaway - EAT & RUN by Scott Jurek

When I was offered a chance to review Eat & Run by Scott Jurek I jumped at the opportunity. I am not
always open to PR opportunities, however as someone going through her own health journey I looked forward to the inspiration I could get for my journey. Scott Jurek is a well known ultramarathon champion and vegan athlete, but his book is humble and heartfelt like a long conversation with an old friend.

There is something truly magical about running. There is little that compares to the feeling of running, the sound of feet hitting the ground and rhythmic breathing tend to send me into a deep meditation. As a child I often found myself running and biking to escape the reality of my mother's illness. It was a pure connection I had to the nature surrounding me and for the brief periods all that mattered was running. In his book, Jurek opens up about his own mother's illness. The analogous tales of pushing yourself to the limits and controlling something fully while everything else falls apart resounded deeply with me. I found myself wrapped up in his stories, there beside him as he balanced more responsibilities as his mother's health declined.

As his life became more about living and less about escaping, I felt myself grow with him. His transition to a plant-based diet was sprinkled throughout earlier tales, building up to the final transition into being vegan. Woven together with his ultramarathon triumphs it doesn't come across as preachy or guilt-ridden. It just makes sense. His diet improves, his running improves and the boy that was an okay athlete becomes a man who is an ultramarathon champion.

Jurek's book is full of inspiration, from the heartfelt childhood tales to delicious workout-boosting recipes. I highly recommend this book for anyone who needs inspiration on their own health journey, no matter what level of experience.
